
Despite numerous adverse reports, salt is actually essential for life -- you cannot live without it.
However, there are big differences between the refined table salt and the health-promoting natural salt.
The table salt is actually 97.5% sodium chloride and 2.5% chemicals such as moisture absorbents, and iodine. Dried at over 648 degrees Celsius, the excessive heat alters the natural chemical structure of the salt, therefore it is harmful to the body.
And the so-called natural sea salt is often contaminated with man-made pollutants, because the seas have long been polluted by man, therefore, we have to be very discernible when come to choosing the salt for cooking.
The salts featured here are minerally balanced and relatively free of contamination.
Traditionally, in this part of Asia, we regularly use water mixed with salt to quench our thirst and to lower the "heatiness" brought about by overindulgence in food, alcohol and lifestyle:
One teaspoon (or less) of natural salt mixed with 500ml of pure water to be drunk first thing in the morning before breakfast is said to quench the "heat" of liver. To enhance the detoxifying effect of this saline water, blend in a tablespoon of lemon juice.
